 Cut lettuce with a plastic knife to keep it from turning limp and brown.  
 Instead of cutting it what I do is whack the core on the counter top a
 couple of times and it will loosen enough to just turn slighly and pull it
 out.

 Cut a couple of parchment sheets to fit your work area.  Then you can just
 lay down the dirty impliments and not have to worry about cleaning the
 counter when you are done.  The parchment paper can just be discarded when
 you are finished.  The cost of parchment is very small...something in the
 order of 4 cents a sheet for this use.
