   Amount  Measure       Ingredient -- Preparation Method

    1 1/2  lb            ground beef or lamb
    1                    onion -- minced
      1/2  teaspoon      cinnamon
    1      teaspoon      paprika
    1      teaspoon      powdered cumin
      1/2  teaspoon      ground coriander
    2      tablespoons   chopped parsley
    1      teaspoon      oregano
    1      tablespoon    zataar
                         wooden skewers dampened in lemon juice
                         salt and pepper -- to  taste
    2      tablespoons   olive oil
                         olive oil for basting
 
 1. Mix all the ingredients thoroughly.
 2. Divide mixture among skewers and shape them like sausage around skewer.
 3. Baste koftas with olive oil
 4, Barbecue for about 25 minutes.
